The chefs at Pride Catering had to keep calm and scrum down to win a hotly contested competition in the countdown to the Rugby World Cup 2015.

Pride Catering Partnership Ltd (based in Guildford) hosted their annual Chef of the Year competition by celebrating the fact that the Rugby World Cup is coming to England. The eighth 2015 Rugby World Cup will be starting in September, where the Twickenham Stadium will host the final. Pride provides catering at schools and businesses in and around Twickenham (and London) and are thrilled that this momentous event is coming to town!

The Pride chefs had to cook a winning menu with inspiration from the 20 countries competing in the World Cup. The winning dish was a South African Bobotie followed by Cranachan with shortbread.

Erin Ferrier, the talented winner, works in a Pride kitchen in Redhill within a retirement community. Erin was born in South Africa, so it was an instinctive choice to choose her national dish and her own family favourite. Bobotie is made from minced beef, apple, plump raisins and exotic spices. The meat is first browned on the hob, then into an oven dish where it is topped with a light egg, spices and bay leaf custard for cooking and crisping. It is a hearty, sweet, savoury dish with a mild curry flavour and great with a fresh salad for summer or with veggies in winter. Erin served hers with yellow turmeric rice and tomato and onion salad.

To follow the main course Erin created a pudding version of the Scottish breakfast dish Cranachan. A luxurious concoction of oatmeal, raspberries, whipped cream, honey and a dash of Malt Whiskey for authenticity!

The contest was held last month at the impressive Unilever Head Office development kitchens in Leatherhead, where their brand new recipes get brought to life. Unilever Food Solutions and Kent Frozen Foods Ltd provided all the ingredients that the contestants needed. Unilever are behind many famous brands, including Knorr, Flora, Meadowland and PG tips. KFF are a major foodservice providing quality foods to the caterer.

Pride Catering provides contract bespoke catering services throughout London and the South East to Schools, Healthcare and Business sectors.

Erin scooped the trophy, £250 and a large hamper. She is looking forward to serving the dish to the residents at the assisted living site where she works and will be jointly cheering on England and South Africa in September.
